    Blackened Fish

    Who says you can’t eat well while camping? This recipe will remind you how much you love fish.

     

    1 pound salmon, or other firm-fleshed fish, cut into 4-½ inch fillets

    1-2 T. Blackened seasoning mix, like Chef Paul’s Blackened Redfish Magic

    Olive oil

     

    After you have caught your fish, fillet it into the ½ inch pieces. Heat a frying pan (if weight is not an issue, use a cast iron one) over the fire until it is very hot. Rub the salmon with some oil and then sprinkle the seasoning mix over both sides, coating well. Place the fish in the skillet and cook for about 2 minutes on each side or until the fish flakes easily. If you have to cook the fish in more than one batch, carefully wipe out the cast iron pan with an old cloth or paper towels in between batches.

     

    Serves 2-3
